Ginger Bread Cookies

Making ginger bread cookies today. I am using the American Test Kitchen recipe from last year. This year I did not have parchment. I just refrigerated the dough balls (large ones). Then I gave each kid a cutting board with flour. They went to town. Only take out a small amount of dough at a time. When it warms ups, it rips. The cookies look great. Also, for small children, small cookie cutters are best. It is easy to find small ones at Wal-Mart or a cheap store that might have a 20 pack for $10. The more in the kit, the smaller the cutters, and that is what you want for little hands.
